Lamb meatballs

My husband and I really enjoy Greek cuisine and very often visit Greek restaurants. Most of the time one of us ends up ordering some dish with lamb.

This meal was a spontaneous idea on one sunny and chilly Sunday. Just didn’t know what to do for a dinner and I got this fresh ground lamb in the fridge. The recipe is very simple and quick to make. Below is a serving for 2.

Ingredients:

1 pound of ground lamb

1 garlic clove |minced or finely chopped|

zest of 1 lemon

lemon slices

1 tsp of dried oregano

1/2 tsp of sea salt

1/4 tsp of black pepper

2 TBS of extra virgin olive oil

some flat parsley leaves finely chopped

Preparation:

Using your hand (best tool) combine ground lamb, garlic, lemon zest, sea salt, pepper, oregano and parsley leaves in the mixing bowl, form the meatballs (I made 12 pieces) and place in the baking pan covered with baking sheet. Place slices of lemon on top or sides of the meatballs. Bake in 400 degrees F for 25 minutes, at the end of baking move lemon slices on the sides of the pan and turn to broil to slightly brown the meatballs.

For taste sprinkle the meatballs with extra virgin olive oil and parsley leaves.

I served the meatballs with white basmati rice and green leaves salad with Mediterranean olives and feta cheese crumbles

  1. We visited Greece for our honeymoon and after that amazing culinary experience, we try to find every Greek restaurant we can! These meatballs look delicious. I am certain they would be very well-complimented by a side of tzaziki :)
