Coconut oatmeal

When it comes to food I love coconut and I’m always looking for new ways to incorporate different coconut forms into my diet. I’m sure there are many freaks like me who could eat coconut oil straight from the jar because of how heavenly it smells. What would you say to an idea of starting your day with a quick and easy breakfast full of coconut flavor? If your answer is yes, you should try my gluten free coconut oatmeal recipe.

Ingredients:

1/2 cup of rolled oats (I use Gluten free Whole Grain Rolled Bob’s Red Mill)

1 cup of water

1 tsp of extra virgin coconut oil

unsweetened coconut milk

unsweetened shredded coconut

raw almond flakes

raisins

Preparation:

Cook oatmeal according to instruction on the package, once cooked add coconut oil and cover for a minute or two, bring oats to the bowl, add as much coconut milk as you wish, sprinkle with shredded coconut, almond flakes and raisins. If you like you can add a bit of whole flax meal. Dig in and enjoy!

  1. I am obsessed with coconut just like you! This oatmeal sounds amazing. My evening snack before bed is a piece of toast with coconut oil and a little honey. The perfect way to end the evening! Now all I have to do is start my day with this recipe. yum!
